This week, I hosted book club, and I wanted to serve up some treats that would truly wow my friends. I’m always on a quest to perfect recipes in certain categories, and this time, I focused on two classics: Lemon Bars and Cinnamon Rolls. Both have a little twist, and each is delicious in its own way. Let’s dive into these two indulgent recipes!
Decadent Lemon Bars 🍋
If you love the tart, zesty goodness of lemon, these bars will be your new favorite. They’re thick with a rich, creamy lemon curd filling that sits atop a buttery shortbread-like crust. But what makes this recipe unique are two interesting ingredients: turmeric and citric acid.
Turmeric is added purely for color, giving the bars that deep, sunny yellow without artificial coloring. Don’t worry—you won’t taste it!
Citric acid amps up the lemony flavor to a whole new level. It adds that extra pucker power, making these bars tangy and oh-so-refreshing.
The shortbread crust is made by browning butter, which adds a wonderful depth of flavor. You press this dough into a greased pan and bake until golden. Then, the lemon curd filling (made with lemon zest, lemon juice, eggs, and a few other essentials) gets poured over the crust and baked until it’s just set. After cooling, a dusting of powdered sugar adds the perfect finishing touch.
Pro Tip: Let the bars cool completely and refrigerate for a few hours before cutting into them. This helps them set, and you’ll get cleaner slices.
These lemon bars are rich, tangy, and have just the right balance of sweet and sour—a perfect complement to a hot cup of tea at book club!
Easy Ultimate Cinnamon Rolls 🍥
Now, for those of us who love a good shortcut, these Ultimate Cinnamon Rolls are a dream. They start with Pillsbury Grands cinnamon rolls (yes, the ones from a can!), but it’s the sauce that takes them from ordinary to extraordinary.
The sauce is a simple mix of heavy cream, melted butter, brown sugar, and cinnamon. Once mixed, this luscious sauce is poured over the cinnamon rolls in a greased pan. After covering the pan with foil, the rolls bake, absorbing all that creamy, buttery goodness. After a quick uncovering and additional baking time, the rolls come out perfectly soft, with golden edges and gooey centers.
To top it off, you can either use the frosting that comes with the rolls or make your own cream cheese frosting for an extra touch of decadence.
Pro Tip: Let the rolls cool slightly before frosting. If you frost them while they’re too hot, the frosting will melt and disappear into the rolls. But if you let them cool just enough, you’ll get a perfectly frosted top that still melts into the warm rolls with every bite.
Both of these recipes were a hit with my book club, and I’m sure they’ll be a hit in your kitchen too. The lemon bars bring a fresh, tangy flavor, while the cinnamon rolls are rich, creamy, and oh-so-comforting. Whether you’re looking to wow a crowd or just treat yourself, these two recipes will not disappoint!
Let me know if you try them, and enjoy every bite! 🍋🍥
