Spaghetti Confetti – A Summery, Veggie-Packed Pasta Salad

When summer hits, I’m all about dishes that make use of fresh produce and can last in the fridge for days. Enter Spaghetti Confetti! This pasta salad is colorful, hearty, and packed with veggies from the farmer's market or whatever you have on hand. It’s incredibly versatile, which makes it perfect for clearing out the fridge and adding your personal twist.


What’s in Spaghetti Confetti?

The beauty of this recipe is that you can mix and match ingredients based on what’s available. Here’s a look at the base ingredients I used:

  • Spaghetti: Cooked, drained, and cut into smaller pieces.

  • Veggies Galore: Black and green olives, marinated artichoke hearts, celery, bell peppers, cucumber, tomatoes (I used Cherokee Purple for extra flavor!), and shredded carrots.

  • Extras: This salad works well with just about anything. I added sun-dried tomatoes for extra richness and grated Gouda cheese for a creamy touch.

  • Dressing: Toss it all with your choice of dressing. I went with Big Fred’s Italian dressing, which brought a nice tangy flavor, but Olive Garden Italian or ranch would work well, too.

Variations and Tips

  • Missing Ingredients? No problem! I didn’t have broccoli this time, so I just left it out. You can easily adapt this recipe based on what you have in the fridge.

  • Flavor Boost: For seasoning, I recommend adding a sprinkle of your favorite blend, like “Salad Supreme,” or just salt and pepper to taste.

  • Make it Your Own: This salad welcomes creativity. Try adding different cheeses, veggies, or even some protein like chicken or shrimp.

This recipe makes a large batch—perfect for summer gatherings, meal prep, or just keeping in the fridge for easy lunches. The flavors actually get better as they marinate together, so it’s just as delicious (if not more) a few days later.
